Green Tomatoes

Have a bunch of green fruit still on your tomato plants? Don't let them go to waste! Once picking the green tomatoes, place in a paper bag with an apple. The apple releases ethylene which helps speed up the ripening of your tomatoes.

Does anyone have any other tricks for green tomatoes?

I leave mine on the plants for as long as possible but if I do have to collect any green ones, I just leave them on a windowsill and they ripen up on their own.

At the end of the season, when it doesn't look like there will be any more ripening going on, I take off all the green tomatoes and:

1. Cut them up and freeze them ( or whole if they're cherry tomatoes), to throw in stews.

2. Fry them with salt and pepper - they are delicious! or

3. Make chutney

Those are wonderful ideas. I absolutely adore fried green tomatoes. Next time you make some, try them a smear of goat cheese and maybe a little balmamic vinegar drizzled on top. Totally delish!
