Cheesy vegetable bake


A delicious and easy way to get your 5-a-day using fresh produce from the vegetable garden. This versatile dish can be adapted using most seasonal vegetables. Use the forum to share your vegetable bake variations.

Ingredients - serves 4

4 medium carrots, thinly sliced

1 small cauliflower

1 small broccoli

50g butter

50g plain flour

200g grated cheddar cheese

300ml milk

300ml cream

3 tbsp breadcrumbs

Salt and pepper to season

 

Preparation method Prep: 30 minutes / Cook: 30 minutes

1. Cook carrots, cauliflower and broccoli until tender, drain and place in a shallow ovenproof dish.

2. Heat the milk gently until it almost reaches boiling point. In a separate pan melt the butter over a low heat and blend in the flour using a wooden spoon. Stir for about 2 minutes, ensuring it stays a pale colour.

3. Slowly add the milk to the butter/ flour mixture, stirring well. Increase the heat, continue to stir.

4. Cook for about 2 minutes on a medium heat, continuing to stir to avoid lumps. Once thickened add the cream, cheese, salt and pepper and whisk until smooth.

5. Pour the cheese sauce over the vegetables and top with breadcrumbs.

6. Bake in a preheated oven 190/375F/Gas 5 for 30 minutes.
