Tomato and basil soup

This fresh and simple tomato and basil soup combines wonderful flavours using home grown tomatoes with basil from your herb garden.
Ingredients - serves 4-6
2 onions, quartered
1 garlic clove
1 tbsp olive oil
1kg ripe tomatoes
600ml vegetable stock
2 tbsp tomato purée
12 fresh basil leaves
Preparation method Prep: 15 minutes / Cook: 30 minutes
1. Chop the onions and garlic and fry gently in the oil for 5 -10 minutes.
2. Chop the tomatoes and add to the pan with the stock and purée. Bring to the boil, cover and simmer for 15 minutes.
3. Blend until smooth, stir in the chopped basil. Reheat and serve.
